Here's a quick run-down of what our meals will look like this week. Not necessarily in the order listed, but they'll be made/eaten sometime throughout the week. Now that Buppy has shifted to day work, menu planning will be more important. Me alone? I'm pretty easy to please. The 2 of us now? Eh . . . requires a little more time and effort.
Monday: Cream cheese-stuffed bacon-wrapped jalapeno thingies [We made these for my birthday and they're fantastic! More of an appetizer than a meal, but hey, what fun is conformity?]
Tuesday: Bugaboo's night alone. Usually it'll be Thursdays, but since he's training this week, it's Tuesday. I'll probably have leftovers [a hamburger or roast pork] or a sandwich.
Wednesday: Grilled steaks, baked potatoes and green salad
Thursday: Corned beef, cabbage & potatoes
Friday: Homemade pizzas
Saturday: Buppy will have to fend for himself since I have a wedding I have to be at for work.
Sunday: We'll be at HonFest until who-knows-when, so I'm not even sure we'll need to plan for dinner.
For lunches, we've got some deli meats, crackers, fruit and I have to pick up some more fresh veggies [baby carrots and the like]. I think I eat more of that than Buppy, but we're totally out of baby carrots and I love 'em. Should be a decent week overall, if you disregard the flooding of our offices today.
