Menu Plan Monday - March 7, 2011

This weekend we hosted a party to celebrate my birthday, and it was amazing. Great friends, fantastic food, Catchphrase --- what more could I ask for? Well, to have remembered to take pictures of our beautiful spread, which I completely forgot. Sad face. Now though, back to the usual menu planning for the week.

Monday: Chicken Divan (Buppy has a recipe he says is really tasty, so we'll give it at try. I roasted a chicken on Friday which Buppy and I were supposed to have for dinner, but he worked overtime, so we have lots of cooked chicken to use up.)

Tuesday: Marinated and grilled pork loin steaks with healthified crunchy Asian slaw

Wednesday: Marinated and grilled steaks (not sure what cut; we'll just pull something from our abundance of beef in the freezer) with fried potatoes and onions

Thursday: Alone night, so something easy. Leftovers or breakfast for dinner probably, or maybe Red Robin as I have a free burger coupon to redeem for my birthday sometime this month.

Friday: Southwestern chicken soup, which is Buppy's favorite of my soups. I'll boil off the chicken carcas and use the meat from the one I roasted on Friday.

Saturday lunch: Sandwiches most likely, and fresh veg to accompany them.
Saturday dinner: Leftovers.

Sunday lunch: Sandwiches again, hopefully a different kind. Fresh fruit or veg to go along with them.
Sunday dinner: Rump roast (which I have to figure out how to cook) with oven roasted veg or fresh salad

Everything sounds pretty tasty, and I have almost everything on hand to make this stuff. Should be a tasty, relatively easy week meal-wise. Ahhhhhhh.

    Just an idea- I usually put my rump roast in the crockpot (for 8 hrs on LOW) with lipton onion soup mix, 1 can of cream of mushroom, and some potatoes, onions, and baby carrots and you have a YUMMY pot roast. Its my hubby's favorite. :-)
